Miss Lil's Garlic With Chicken
Serves 4
3 1/2 pound frying chicken, cut up
10 cloves garlic, peeled and quartered
1/4 cup dry vermouth
1/4 cup vegetable oil
4 ribs celery, coarsely chopped
1/2 teaspoon crushed red pepper
2 tablespoons Westport Spice Antonio's Italian Spice Blend
Place chicken, skin side up (or may use 4-6 ounce boneless, skinless chicken breast halves), in baking dish. Combine remaining ingredients in bowl. Pour marinade over top of chicken. Cover with foil and let sit 1 hour to marinate at room temperature or can be done the night before and refrigerated. Bake in a 350-degree oven for 45 minutes (add 15 minutes if refrigerated overnight). Remove foil and bake 15 minutes longer.
